My turn, Kajsa, to share another recipe! It seems like you guys have enjoyed the recipes that we have been sharing, fun! We will keep that going! :) My recipe this week is cauliflower tortillas! When moving to L.A eating Mexican food "came with the price". Can you translate it like that in English? Swedes may understand! And I could literally eat only Mexican for the rest of my life, that's how much I love Mexican food haha! But, when changing my diet and cut out gluten (and corn, for the Candida diet) have I discovered cauliflower tortillas. SO easy to make and so yummy! I like to eat my tortillas with a fish taco, chicken taco, turkey taco, just have as a side to my salad and dip it into a dressing, dip with guacamole, make a little breakfast burrito, the list can be so long!

Here comes the recipe, enjoy!


1 cauliflower head

2 eggs

Salt and pepper to taste cilantro (if you don't like cilantro you can skip it!)

1/2 lemon or lime

Salt and peppar to taste

Step 1: Preheat the oven to 175 C. Line a baking sheet with parchment paper.

Step 2: Put the cauliflower into a food processor/mixer and mix until it smooth, should look like mashed potato. t it as "rice" too)

Step 3: Put the cauliflower into a food processor / mixer and mix until it smooth, should look like mashed potato.

Step 4: Put the cauliflower into a bowl and microwave for 2 minutes, then stir around and put back in for another 2 minutes.

Step 5: Place the cauliflower in a fine cheesecloth or thin dishtowel and squeeze out as much liquid as possible, (it contains a lot of water, important to get as much out as possible) careful not to burn yourself. Dishwashing gloves are suggested as it is very hot.

Step 6: In a bowl, whisk the eggs, cilantro, lemon/lime + salt and pepper. Then add in the cauliflower "flour".

Step 7: Mix until well combined. Use your hands to shape 6 small tortillas on the parchment paper.

Step 8: Put inside the oven for 7 minutes, then flip, and put back in for another 7 minutes.

Step 9: Place tortillas on a wire rack to cool slightly. If you want to, you can eat them as they are or put them in a pan a few more minutes and press with a spatula to make them flatter. Enjoy! :)
